Looking for the perfect accompaniment to your next steak dinner?  Here’s one of our favorite potato side dishes: Roasted Herbed Red Potatoes.

Oakridge BBQ Roasted Herbed Red Potatoes

4½ lbs. new potatoes; washed, dried and quartered
1 bunch fresh Rosemary, stemmed and chopped
2 Tbsp. Oakridge Santa Maria Steak Seasoning
¼ Cup good extra virgin olive oil
¼ Cup grated Parmesan cheese

Preheat oven to 425º

Instructions:

Step One….  Wash, dry and quarter new potatoes.

Step Two…  de-stem Rosemary leaves and chop.

Step Three…  In a large bowl, add potatoes, Oakridge BBQ Santa Maria rub, chopped rosemary and olive oil and Parmesan cheese.  Mix with hands to combine thoroughly.  Be sure olive oil and seasonings cover every potato chunk.

Step Four…   Pour seasoned/oiled potatoes onto a rimmed baking sheet and dust with Parmesan cheese one more time to ensure complete coverage.

Step Five…  Bake in oven at 425º for one hour.  After one hour, remove from oven and gently stir potatoes, then back into oven for an additional 30-40 minutes.

Step Six…  Remove from oven, stir potatoes one last time and serve while hot.
